This week, summer squash is our Food of the Week. It is the peak of the season for summer squash, the best time to enjoy them because they are the most flavorful and nutritious. While steaming is a great way to prepare many vegetables, it tends to make summer squash mushy and watery, causes it to lose much of its flavor. That's why I recommend healthy sautéing summer squash. Healthy Sautéing uses a minimal amount of liquid so that both the flavor and nutrition of the squash are maximized. Enjoy summer squash now while it is plentiful and inexpensive!

Kudos to the USDA's new icon depicting their dietary guidelines! Unveiled last week by first lady Michelle Obama, it has been well publicized and is receiving rave reviews. And for good reason. Compared to the old pyramid, which was overly complex and tried to communicate too many different nutrition facts, the new icon is brilliant in its simplicity and easily defines what we should look for on a Healthy Eating plate.
"MyPlate" promotes eating more fruits and vegetables, which cover half the plate. Grains occupy an additional quarter, as do proteins such as lean meat, fish, poultry, beans, nuts, seeds and eggs. A glass of milk rests to the side. For a country caught in the midst of an obesity epidemic, MyPlate is a great reminder of how enjoying more fruits and vegetables, and limiting heavy, calorie-laden foods in your meals is not only the path to improved health, but to healthy weight loss.
I can't imagine anything more supportive of the World's Healthiest Foods and our Healthiest Way of Eating than this new icon. This picture is truly worth a thousand words. The USDA has said that the old plan was to provide information, but the new plan is to actively change American eating behavior with the new icon as its centerpiece. Our goals here at WHFoods are also placing increased focus on providing not only information, but ways to put that information into practice. By using our new healthy cooking methods, preparation tips and recipes, you can easily fill your plate to match the MyPlate icon with foods that are not only good for you but taste great as well!
