Soy Bean and Fennel Salad
Soy Bean and Fennel Salad

Prep and Cook Time: 15 minutes
Ingredients:
  • 4 cups or 2 15 oz cans of soy beans, rinsed
  • 1-1/2 cups sliced fennel bulb
  • 12 cherry tomatoes, quartered
  • 4 TBS finely minced onion
  • 2 cloves garlic, pressed
  • 4 TBS fresh lemon juice
  • 3 TBS chopped fresh parsley
  • 3 TBS chopped walnuts
  • olive oil to taste
  • salt and pepper to taste
Directions:
  1. Mince onion and press garlic and let sit for 5 minutes to bring out their health-promoting properties.
  2. Mix all ingredients together. This salad gets better as it sets, so if you have time, prepare it in advance.
Serves 4

Does the high heat involved in canning destroy the beneficial enzymes in pineapple? If so, is canned pineapple still considered a World's Healthiest Food?
This is a great question since it is brings up the definition of a healthy food in general as compared more specifically to a World's Healthiest Food.
It is true that the canning process does destroy the activity of the bromelain enzyme found in fresh pineapple and reduces the content of other nutrients as well. The nutrient loss that occurs with canning is why I prefer fresh fruit to canned fruit.
Fresh fruit—compared to canned fruit—is more of a whole food if we include as part of the definition of a whole food one that has the least amount of processing. It is rare that no processing would occur to a food; you could even say that the very act of picking the pineapple is actually processing and takes away from its wholeness (but that's a whole other philosophical conversation).
But should the loss of some nutrients disqualify the canned pineapple from being a World's Healthiest Food? I don't think so.
If I apply the standard that processing affects the nutrient content of a food and therefore disqualifies it, then I would have to apply that to all of the World's Healthiest Foods and object to cooking, even light cooking of vegetables, which I think is appropriate.
Canned pineapple is still rich in nutrients, and I would rather see people eat canned pineapple than not enjoy this food at all. In my view, choosing canned pineapple that is organic and not packed with sugar water would also make it closer to a whole food.

This week, blueberries are our Food of the Week. Summer is the time of year when we begin to enjoy an abundance of fresh fruits, and it is best to enjoy them when they are at their peak. Now is the time to enjoy blueberries because they not only taste their best but you get the most return for your dollar.
The healthiest way to eat fruit is the traditional way: raw. By eating fruits raw, you can enjoy their fullest flavor and gain the greatest benefits from their vast array of nutrients and digestion-aiding enzymes. When you think about the natural enzymes in fruit, it is no surprise that for millennia, people in Asia and those living along the Mediterranean have been eating fruit for dessert, not only as a delicious ending to a meal, but as a great digestive aid as well.
That's why I often wonder why people settle for sugar and fat-laden desserts when they could be enjoying desserts made with delectable whole fruits. They not only taste great, but take no time at all to prepare compared to cooked desserts. Cooking fruit also exposes itto high temperatures (baking at 350°F/175°C) , which destroys its naturally occurring, health-promoting enzymes; these enzymes are destroyed at 118-180°F/48°-82°C. Vitamins are lost at temperatures above 200°F/93°C. For example, fresh apples are a good source of vitamin C, but when they are cooked, most of their vitamin C is lost, and their glycemic index (a measure of how quickly their sugars are absorbed) increases.

Quick Broiled Salmon with Ginger Mint Salsa
Quick Broiled Salmon with Ginger Mint Salsa

Prep and Cook Time: 15 minutes
Ingredients:
  • 1/3 lb salmon fillet, cut in half
  • 2 tsp lemon juice
  • sea salt and pepper to taste
  • Salsa
  • 1 ripe tomato, diced
  • 1/2 cup green onions, minced
  • 1 tsp ginger, minced
  • 2 tsp fresh mint, minced
  • 1 tsp lime juice
  • sea salt and pepper to taste
Directions:
  1. To Quick-Broil, preheat broiler and place an all stainless steel skillet (be sure the handle is also stainless steel) or cast iron pan under the heat for about 10 minutes to get it very hot. The pan should be 5 to 7 inches from the heat source.
  2. Rub salmon with 2 tsp fresh lemon juice, salt and pepper. (You can Quick Broil with the skin on; it just takes a minute or two longer. The skin will peel right off after cooking.)
  3. Using a hot pad, pull pan away from heat and place salmon on hot pan, skin side down. Return to broiler. Keep in mind that it is cooking rapidly on both sides so it will be done very quickly, usually in 7 minutes depending on thickness. Test with a fork for doneness. It will flake easily when it is cooked. Salmon is best when it is still pink inside.
Salsa
  1. Combine all salsa ingredients.
  2. Spoon over salmon.
  3. Garnish with mint and a sprinkle of extra virgin olive oil.

Does the iodine value of kelp depend on the location it was grown?
Yes, the amount of iodine contained in kelp and all other sea vegetables depends heavily on its environment. While all plants—both sea plants and land plants—depend on their environment for mineralization, the circumstances are particularly variable with respect to sea plants and iodine.
Let me give you one example from a research study that examined the iodine content of sea vegetables from a variety of different locations, including waters off the coasts of the United States, Canada, Tasmania, and Namibia. This study found one species of the sea vegetable nori to contain over 8,165 micrograms of iodine per gram of plant!
To give you a better idea of how much iodine this amount represents, consider the fact that one tablespoon's worth of fresh sea vegetable will weigh approximately 5 grams, which would give one tablespoon of this particular nori over 40,000 micrograms of iodine. Since the Dietary Reference Intake (DRI) level for iodine for daily recommended iodine is 150 micrograms, this amount would represent about 266 times the recommended amount! It would also be about 40 times more than the recommended limit for daily iodine intake. This level, called the Tolerable Upper Limit (UL), is set for 1,100 micrograms for adults. On the other hand, in this same research study, scientists found some samples of kelp to contain only 16 micrograms of iodine per gram, leaving a tablespoon to contain approximately 80 micrograms and under 55% of the recommended daily intake level.
Even though two different types of sea vegetables (nori and kelp) are being compared in the above example, dramatic differences of this kind of iodine content can occur within the kelp family or within the nori family. In other words, not only is it impossible to find a constant iodine level among the different types of sea vegetables, but it is also impossible to find a constant iodine level within kelp sea vegetables, or nori sea vegetables, or within other types of these ocean foods.
Researchers have tried to determine the reason for these amazing differences in sea plants and their iodine content, and there appear to be many different factors. Most of these factors are related to the changing needs of the plants, including the operation of their chemical defense systems and their antioxidant needs.
Unfortunately, for us humans who may need to focus on our level of iodine intake, this situation makes sea vegetables a non-dependable source of iodine, and a potentially risky source of excess iodine.
For these reasons, I do not recommend that you count on sea vegetables as a dependable food for offsetting an iodine deficiency, and I also recommend that you think about sea vegetables as a potential source of iodine excess. (Many food databases do not even report the iodine content of sea vegetables due to this unusual amount of variability in sea vegetables when it comes to this mineral). Some manufacturers of sea vegetables do measure the iodine content in their products and present this information on their labeling. This type of information can of course be extremely helpful.

Add a bit of sweet to your Healthiest Way of Eating with this mosaic of kiwifruit and strawberries. It takes just minutes to prepare and is full of health-promoting vitamin C. Most people don't realize that a kiwifruit has more vitamin C than an orange!

10-Minute Kiwi Mandala
10-Minute Kiwi Mandala

Prep and Cook Time: 10 minutes
Ingredients:
  • 8-oz low-fat vanilla or soy yogurt
  • 3 TBS fresh orange juice
  • 1 TBS cream honey**
  • 1/2 tsp grated orange rind*
  • 1/4 tsp grated lemon rind*
  • 1 kiwifruit
  • 4 strawberries
  • Optional: 2 TBS chopped walnuts or pecans, orange zest for topping
Directions:
  1. In a small bowl, whisk the yogurt, orange juice, honey and grated orange and lemon rind, making sure the honey is completed blended into the yogurt.
  2. Place in 2 shallow soup dishes.
  3. Peel the kiwifruit and slice into 1/8" rounds.
  4. Take the stems off of the strawberries and cut them lengthwise into 4 pieces.
  5. Arrange the fruit in a beautiful pattern on top of the yogurt mixture and sprinkle with some grated orange rind and nuts if desired.
  6. Refrigerate for 1/2 hour so that the yogurt is well chilled. Enjoy immediately!
    *Cream honey is whipped honey found in most health food stores.
    **Use an organic orange and lemon, if possible, to avoid wax coating.

Does hard-boiling, scrambling, poaching, or frying eggs reduce or destroy their lutein content?
Lutein is a carotenoid that is definitely susceptible to heat and oxygen like all carotenoids. However, I've been surprised at the research reports showing better stability for lutein than I would have expected.
Some manufacturers have added lutein to processed foods with good results. Lutein added to ready-to-eat cereals, for example, has been exposed to 350F (177C) heat for 15 minutes and then 200F (93C) heat for 90 minutes and remained essentially stable. It's also been added to the fruit filling of cereal bars with good results under similar conditions. Lutein in aged cheeses has also been show to be fairly stable.
Although I haven't seen any information on the boiling of eggs, I would suspect the lutein to be better preserved than ordinarily suspected. By the way, lutein-enriched eggs are currently available in the marketplace and offer up to 2 milligrams of lutein per 60 grams (about 1 jumbo egg).
